Of course, these ladies who prepare us our daily tortillas can not be missing in series about the real Guatemala. Here we see the clay comal ready to receive the uncooked corn cakes to be turned into fresh tortillas. Below the comal we can see the fire and the ever present pot with frijoles (black beans).

As anybody know, food can be divided into three major categories: proteins, carbohydrates and fats. Can you point out what food in the Guatemalan staple belong to which category?

    Sorry I cannot comment on which food belongs in which category…I eat them all, ha-ha-ha! Although, tortillas could belong to all 3, couldn’t they ?

    Lard is widely used for frying so pretty much every fried food contains fats.

    Black beans for protein.

    Corn tortillas for carbohydrates.

    Great photo! Really captures the essence of typical Guatemalean life. I got my first tortilla msking lesson last summer in Cuidad Vieja. Great fun, but not as easy as the ladies make it look.
