Simple tray showing the colours and shapes of what goes on the grill for Guatemalan pinchos, or shish kebabs. The meat can be pork, beef, chicken, or any of the many different sausages found in Guatemala. The same with the vegetables, anything goes, but the basic are onions, chiles, tomatoes, bell peppers.
