As I have mentioned before, we are hombres de maíz, men of maize, therefore a big portion of the Guatemalan diet is based on corn. We eat maize in so many ways from tortillas to tamales, charbroiled or boiled corn on the cub, either with just salt and lime juice or turned into elotes locos.
