Tres Leches Cake in a Jar from Los 7 Caldos

Just when you think you have covered every single corner of La Antigua Guatemala, you come across something that you should have covered years ago. I mean, how is it possible that just now I am sharing a picture of the tres leches cake with you. Shame on me. That’s like not having any pictures in the archives of flan antigüeño.Bad Rudy, bad. Well, as the cliché saying goes, better late than never.

If you have a recipe for the pastel de tres leches, please, do share it with the rest of us.

Honestly, I had never have cake out of jar, but I did enjoy it very much. Today I will definitely have a piece of cake to celebrate my birthday.

I got this one off of Guatemalan Traditions a few years ago and it’s a family favorite.
3/4C butter
1 1/2 C sugar
9 yolks
1tsp vanilla
2C flour
1 1/2 tsp baking powder
1C milk
9 egg whites
1 tsp cream of tartar
2C heavy whipping cream
5oz evaporated milk
14oz sweetened condensed milk
2C heavy whipping cream
1C white sugar
Cream butter and sugar, add egg yolks one at a time then add vanilla. Mix flour and baking power and add to mixtures alternately with the milk. In seperate bowl beat egg whites and cream of tartar. Genlty fold whites into batter. Spread mixture into greased and floured 9×13 pan and bake at 350 for 30 minutes or until toothpick comes out clean then allow to cool. In a small bowl stir together 2C heavy cream, evaporated milk and sweetened conensed milk and pour mixture over cake until it won’t absorb any more. Reserve extra to serve with cake. In another bowl whip the whipped cream and sugar and spread over soaked cake.

My wife took a stab at tres leches for new year’s (our first time hosting in our own home) it was a success.
