Foodie Fridays — Tortillas con chorizo y longaniza y queso Chancol
Tortillas con longaniza ahumada [smoked white sausage] and gorillas con chorizo ahumado [smoked red sausage] from Tecpán are among the most popular foods in Guatemala. You can find them in restaurants, on the streets, but often in the backyard or front yard’s barbecuing known as churrascos or parrilladas.
These tortillas con chorizo and longaniza also come with the delicious queso Chancol, [a Guatemalan cheese inspired in the Grasso d’Alpe cheeses of northern Italy and Switzerland] and are served in the middle of a field of sunflowers. Believe it or not, this is within Antigua at the Girasoles de Antigua, off the Alameda El Calvario. There’s a new post coming up soon about the Girasoles de Antigua plantation; stay tuned!
Of course, this is exquisite treat any time, great for celebrations like Día del Padre, Father’s Day, don’t you think?
