Conchas pata de burro or black cockles are the favourite shelled mollusk in Guatemala. You find them at every ceviche mixto anywhere in the country. Sometimes, though, you can find them opened in half with chopped onions, cilantro or mint and lime juice, as shown here. Even though these conchas are delicious, these are not for everyone, especially if you have a weak stomach.
