I can easily explain longanizas as the Guatemalan white sausages which have chopped onions and yerba buena, mint, along the ground meat. Sometimes they add a tiny bit of chopped chiltepe or jalapeño peppers. Now, they normally served longanizas on top tortillas with guacamol, chojín and chirmol.
