Visual Recipe for Guatemalan Fiambre for All Saints Day

All Saints Day is celebrated in Guatemala on November 1. Some people go fly kites, some of them fly giant kites. Others go watch the drunken races in Todosantos Cuchumatanes. The majority go spend time with the family at the cemetery. Fiambre is the most popular food in Guatemala for All Saints Day and Day of the Dead [Nov. 2].

So, today I decided to document with photographs the preparation of fiambre. Think of it, as a visual recipe for the most colourful, exotic, exuberant and delicious dish of the Guatemalan gastronomy. I chose the fiambre recipe from the mom-and-pop restaurant Lo-Mix because they have been doing it for over thirty years and because that’s where I get my fiambre every year.

The photo session produced 222 images. I reduced it to about 50 photographs by selecting the best of the series for each ingredient added to the fiambre salad. Here’s I am sharing with you nine images the best represent the preparation process for fiambre. Tomorrow I will add a slide show with all the photographs.

Hoy decidí documentar con fotografías la creación de uno de los platillos más coloridos, exóticos, exuberantes y deliciosos de la gastronomía guatemalteca, el fiambre. La receta visual aquí presentada es del fiambre antigüeño que preparan en Lo Mix desde hace unos 30 años.

La sesión completa fue de 222 fotografías, sin incluir 3 de prueba de luz y demostración. He reducido el proceso de la preparación a 50 fotografías sin incluir una por cada ingrediente que se añadió al fiambre. Aquí les presento las 9 fotografías más representativas de la preparación de fiambre. Mañana añadiré un presentación fotográfica con todas las imágenes.
