This is the third presentation of revolcado, a delicious and exotic stew from Guatemala. I still think the best presentation goes out to the Revolcado from La Fonda de la Calle Real, shared with you in April 2009. The best flavour of revolcado goes out to Los 7 Caldos, which I shared with you in November 2015. By the way, the presentation from Los 7 Caldos is quite appetising as well. Today’s presentation of revolcado comes from Comedor Doña Meli, a diner serving a more rustic version with big chunks of meat in a terracota bowl.

As I have mentioned before, revolcado is such a delicious stew, but it is not for everyone as the meat used in this colourful and exquisite dish is cabeza and vísceras de puerco, pig’s head and entrails. In fact, it’s best if you don’t know because the dish will be such a treat and you might not even notice. In Mesoamerica is quite common to use the pork heads and other parts as the meat for appetising stews, tacos, burritos and other meals. ¡Buen provecho!
