I’ll never ignore your food blogs Rudy! I’m guessing that it’s the ingredients that are not to everyone’s taste; pigs head and offal! Additionally, in Guatemala poorly raised and prepared pork has been associated with cases of trichinosis, so some people avoid pork, though in a caldo there is virtually no risk of undercooking the meats. However, none of this puts me off! I personally find this a really tasty dish and enjoy as a comfort food, especially in the cooler more miserable weather, not that there’s much of that in Guatemala!
Hi Canche, I am glad you still pay attention to the food posts. I wish have had revolcado for these consecutive 10 days of rain we have had in Guatemala. Also, most people might enjoy the taste of revolcado as long as you don’t tell them what is in it; don’t you agree?
